Ciambella al caffè


  • 350 g flour 00
  • 200 g of brown sugar
  • 100 g of butter
  • 3 eggs
  • 100 ml ristretto variety Avio
  • ½ teaspoon Bourbon vanilla powder
  • 1 teaspoon of unsweetened cocoa
  • 1 pinch of salt
  • 1 bag of baking powder


Cut butter into small pieces and mix with the sugar; as soon as the mixture becomes light and fluffy, add the eggs one by one.

Then add the warm coffee, always continuing to stir. Separately, in another container, sift the flour, baking powder, salt, cocoa and vanilla. Then, gradually incorporate all the remaining dry ingredients into the dough, being careful not to dissolve the mixture. If the dough is too thick, add half a glass of milk.

Transfer the mixture to a greased and floured cake tin, bake in the oven at 160 degrees for 55 minutes. Garnish the coffee cake with a sprinkling of powdered sugar.
